Sri Lankan Coconut Sambol

I first tried Coconut Sambol a few years ago while visiting Sri Lanka and I instantly fell in love with its fresh, fiery and tangy flavours. Since then, it has become a staple in our house and I eat it with almost everything, from rice and curries to wraps and grilled dishes. What I love most is that it’s quick to prepare, full of goodness from simple, healthy ingredients and bursting with tropical freshness.
Ingredients
2 cups fresh shredded coconut
2 tsp chilli flakes
1/2 lemon or lime juice
1/2 onion, finely chopped
1-2 garlic
Salt, to taste
Instructions
Place the chilli flakes, chopped onion, garlic and salt into a mortal and pestle. Pound until well combined.
Add a small handful of shredded coconut and pound again. Continue adding the coconut in batches, working it in until fully incorporated.
Squeeze in the lemon or lime juice to your taste and mix well until everything is evenly combined.
Taste and adjust the seasoning or lemon/lime juice as needed.
